Summer is finally here in the East. The sun is shining more than two consecutive days in a row and maybe this time, summer will stick. My watermelon and cantaloupe plants are in the ground and there are fresh mangos of every variety in the stores. This year, thanks to my new foodie buddy of MamaHarriskitchen I had the privilege of attending an event hosted by the National Mango Board, an agriculture promotion group, whose purpose it is to drive awareness and consumption of both domestic and imported mangos. This was during BlogHer Food 2014 mid-May in Miami. Mama Harris, aka Dawn Harris , contributed a Spicy Mango Sweet Potato Hash recipe (page 44) to this book. My point is I got into this event (smile) with an invitation and am now forever changed by the possibilities of mangos. Who knew that mangos are a superfruit!

In my mind, mangos are no longer relegated to simple peeling and eating or peeled and chopped in a smoothie. Think Quinoa Mango Salad with Almonds, Mango and Crabmeat Salad, Brussels Sprouts with Mango and Bacon. According to the National Mango Board, “most of the mangos sold in the U.S. are one of six varieties: Ataulfo, Francis, Haden, Keitt, Kent and Tommy Atkings and they are are available all year long.” Here however is the real surprise: one mango provides 100% of your daily vitamin C, 35% of your daily vitamin A; and 12% of your daily fiber.

The most creative I’ve gotten with mangos is putting a store-bought mango salsa on some grilled white fish, which was delicious! Your post has inspired me to try it in other ways, too.

This cookbook is really excellent and the recipes are quick and easy and so refreshing. Wait until you try the mango black bean salsa recipe. Tonight I made the mango, quinoa arugula with chopped almond salad. All of recipes seem to be Easy peasy. Thanks for your comment. Have to check out welgal.com
