I regularly use olive oil to cook. Occasionally I flavor my sauteed dishes with a dollop of butter because it makes the final product taste so good. But with Star’s New Butter Flavored Olive Oil, I will no longer have to engage in this practice.
On a recent visit to Walmart I picked up my very own bottle of Butter Flavored Olive Oil and set out to prepare a delicious meal based on a kid friendly recipe. I was curious to see how many ways I could use this oil in preparing a healthy meal.
I adapted a whole grain pasta bake recipe that students from Prescott Middle School in Wisconsin created. To begin, I prepared the pasta according to package instructions except I dropped a tablespoon of Butter Flavored Olive Oil into the boiling pasta water.
I switched out the spinach for lacinato kale then I saute the kale with a dash of Butter Flavored Olive Oil, fresh garlic and a pinch of red pepper flakes. My thought is that the kale will hold up better in a baked casserole than the more delicate spinach and the kale will offer more depth and variety to the consistency of the chew.
Carrots and zucchini were then shredded and tossed together in a bowl with a can of drained and rinsed organic chickpeas.
All of the ingredients, including the kale and drained pasta should then be mixed with tomato sauce before baking in a lightly oiled dish for 20 minutes. Again I used a very tiny amount of the Butter Flavored Olive Oil to do this. After twenty minutes in the oven, top the veggie bake with Rice Cheese rather than mozzarella if you are interested in eliminating dairy. Otherwise use fresh mozzarella and bake for an additional ten minutes.
I love that Butter Flavored Olive Oil has the flavor of butter, the health benefits of olive oil and is gluten free. It can be used for salad dressings, to saute veggies and meats, and as a simple topping on toast or sandwiches. It is very flavorful but not in the slightest bit greasy at. And with the recent FDA acknowledgment that trans-fats are simply a no-no, I was thrilled to read the ingredient label and discover this product contains only olive oil, extra virgin olive oil and butter flavorings. Here’s the recipe:
Recipe

Adapted from Prescott Middle School Students
1 1/2 cup whole grain pasta
1 cup shredded zucchini
1 cup shredded carrots
1 cup of sautéed lacinato kale
1 16 oz can of organic chickpeas
32 oz can tomato sauce
1 cup of rice cheese (mozzarella if preferred)
You are going to love the way this baked veggie casserole tastes. It’s so simple and fast to create. Your children will enjoy it for after all, it is a kid friendly recipe created by middle school students. And there will be enough for left-overs for lunch or dinner. Oh yes, for your salad dressing, use this Butter Flavored Olive Oil with Vinegar, a touch of tarragon and shake the bottle.

I use Olive Oil to cook with now that I’m focused on healthy eating. I used to use butter on everything before though! I never heard of rice cheese. Is it any good. I am trying to avoid dairy myself if I can.
Patricia A Patton says
Rice Cheese Arelis is also new to me. It gives the idea of mozzarella, but it is lighter than crumbles cheese and certainly less cheesy. But if you are working your way away from dairy I found that it was a good alternative. Really not that bad.
Joyce@MommyTalkShow says
Looks delish.
Is it weird that I’ve never eaten kale? I really should!
Arelis Cintron says
Yes Joyce, go make some Kale 🙂 …its great in soup 🙂

Oh my word that kale looks great! Our farmer’s market had dino kale last week, and I wasn’t sure exactly what to do with it. I’ll give this recipe a try. Thanks!
Patricia A Patton says
Yes even I was inspired by the looks of that kale. Something to aspire to with all of my photos, something that evokes a response. I have not had dino kale but as much as I love kale, I cannot imagine not liking it. Thanks for reading.
