I hope everyone had a good Fourth of July. Â For readers outside of North America who do not celebrate this holiday, Â I hope you enjoyed a leisurely day watching Wimbledom or enjoying family.
I am a wanna-be tennis star. Right now I am watching Tsonga (Fr) and Kohlschreiber play. Â Simultaneously I am preparing a modified version of salade nicoise, green salad from my garden and I am pickling beets to enjoy with the chicken we’ll BBQ along with chicken turkey burgers.
The good thing about beets is they are low in saturated fats and cholesterol; but the bad thing is a lot of the calories in beets come from sugars. I have tons of beets and am working my way through a few recipes trying to get them pickled and tasting good with minimal sugars. Some have fennel and serrano peppers, others have a simple pickling combination. Â Let me know if you have a recipe to share.
Yesterday’s post featuring the Ikarian Longevity Stew recipe brought Diane Kochilas, chef and author,Â to boomerwizdom. Â Turns out she developed and wrote about this particular recipe in 2009 Â and asked that I properly credit her with this recipe. I am happy to do this and I am happy to learn about her.
If you are into Greek food, it looks like Diane is a master. Â She runs classes at her island retreat on the island of Ikaria. She is now in NY testing new menus, according to her website, and she will be offering classes in San Francisco, Houston and NY this year. Look out for her and take a look at her site.
Much of my travel writing will be moving from here to its own website. In the next couple of days, I will let you know the name of the site. Let me know if you would be interested in joining future learning journeys that include cooking classes to Italy. Â And I am waiting to hear back from Kochilas’ site about group costs to Greece.
Those of you who know me also know I am an amateur cook. Â But I know little about what makes Greek food unique. Maybe Diane will send me a copy Â of her new book to review for you.
I just want to back track to that idea of eating for longevity and encourage you all to keep this idea in the front of your mind every time you choose to fed yourself. It’s worth the effort and we’ll talk soon.
